    Taiwanese whisky has been quietly building a reputation for producing exceptional spirits, and Yushan is another name helping push that movement forward. The Yushan Taiwanese Single Malt finished in ex-bourbon casks arrives at a respectable 46% ABV and was sent over for review. Transparency matters, so it’s worth noting this bottle was provided as a sample.

    This whisky is distilled, aged, and bottled by Nantou Distillery in Taiwan. The name “Yushan” draws inspiration from Mount Jade, the tallest mountain in Taiwan, and the whisky itself reflects a style that feels heavily influenced by traditional Scotch production. With time spent in ex-bourbon barrels, expectations lean toward honeyed sweetness, soft oak influence, and bright fruit character.

    Ex-bourbon barrels are one of the most common cask types used in Taiwanese whisky maturation. These barrels often lend notes of vanilla, caramel, honey, and gentle oak while allowing the natural malt character to remain present. In warmer climates like Taiwan, whisky can mature more rapidly due to increased interaction between the spirit and the barrel.

On the nose:
    The aroma opens with a rich wave of honey that immediately matches the whisky’s golden appearance. Floral notes rise alongside it, creating a bouquet that feels fresh and lively. There’s a bright fruitiness present as well, leaning toward tart green apple reminiscent of Granny Smith. Beneath those sweeter notes sits a gentle layer of spice and light wood sugars from the barrel. The oak influence remains soft and restrained, presenting more like cedar or sandalwood rather than heavy char.

    A subtle presence of alcohol is detectable, but it never becomes harsh. Overall, the nose carries a strong resemblance to a Highland-style Scotch, with its balance of honey, floral character, and gentle spice.


Taste:
    The first sip continues the floral theme established on the nose. There’s an almost bouquet-like quality, as if stepping into a flower shop and catching that rush of pollen and blossoms in the air. Sweet orchard fruit flavors emerge quickly, bringing forward notes of green apple and hints of pear. Honey again plays a central role, supported by light vanilla and caramel from the bourbon casks.

    The wood influence remains unique and delicate, leaning more toward cedar or sandalwood than heavy oak. A touch of spice from the barrel adds structure without overpowering the softer elements of the whisky. The mouthfeel is pleasant with a solid cling to the palate, and despite the 46% ABV, it drinks smooth and approachable.


Finish: 
    The finish has a nice interplay of tart green apple and wood sugar, making for a smooth and easy drinking experience. This whiskey does not drink warm, clinging nicely to the palate with a delightful softness.The maltiness shines through beautifully. The balance of sweet fruit flavors, including hints of pear and red delicious apples, paired with subtle spices and a light caramel finish, creates a well-rounded sip.


Final Thoughts:
    It’s a great entry point for those interested in exploring Taiwanese whiskey or looking to add something unique to their collection. This whiskey is approachable, especially for those who enjoy sweeter scotches. Yosan has done a remarkable job showcasing what can be achieved with ex-bourbon casks without the need for extensive blending.
