    Good Times themselves are based out of Kentucky. Where they are taking whiskey, much of it coming from MGP, and typically keeping single barrel and barrel proof. Now, sometimes they release whiskey as just that, however they are more known for their finishing. Sometimes finishing two and three times to create a very unique profile. On paper I love the idea, giving whiskey a unique flavor without adding actual flavoring. This release is quite fun from the sounds of it. 

    The name Apple Pie comes from the use of both an apple brandy casks and an Amburana cask. Now, each on their own I am a huge fan of. Apple brandy brings some nice sweetness to a bourbon without taking over. However, I know Amburana is a mixed bag for many. Personally, when done right, it can bring a nice cinnamon sugar sweetness and can go overboard quickly in. the wrong hands. So what better way to see how well Good Times can do finishing than with something like Amburana!

On the nose:
    The aroma opens with sweet apple brandy and warm cinnamon sugar from the amburana. A subtle undercurrent of bourbon character remains, with sweet oak, vanilla cream, and a hint of caramel rounding out the profile. Surprisingly, the amburana influence is restrained, offering balance without overpowering the experience.

Taste:
    The first sip delivers an intriguing blend of cinnamon stick, freshly grated spices, and baked apple. The mouthfeel is thick and oily, creating a lingering warmth. A light bitterness, likely from the apple brandy cask, adds complexity without becoming harsh. The bourbon’s core elements—charred oak, vanilla, and a touch of rye spice—persist in the background but remain secondary to the finish-driven notes.


Finish:
    The finish is long and warming, with a lasting impression of apple turnover dusted with cinnamon sugar. Subtle pastry-like notes and a hint of vanilla icing emerge, creating a dessert-like conclusion that stays on the palate.


Final Thoughts: 
    Good Times Apple Pie Cask Finished Bourbon is an adventurous and well-executed experiment in finishing. While the bourbon's core profile takes a back seat, the unique combination of sweet apple and spiced amburana creates a bold, holiday-ready experience. It offers a solid, niche experience best suited for adventurous whiskey drinkers open to unique finishing and individuals looking for sweeter whiskey options.
