    Now, when it comes to finishings with whiskey, I tend to be on board. Finishing can really make a spirit your own and stand out in the world of spirits. Something as simple as a few extra months in a barrel can be great. And I've been on the record of finding those "unique" finishings and always open to try something different. From smoked barrels, to brandy, to amburana, I am 100% open to the ride. Now, when it comes to caramel banana...this truly caught my eye.

    Good Times themselves are based out of Kentucky. Where they are taking whiskey, much of it coming from MGP, and typically keeping single barrel and barrel proof. Now, sometimes they release whiskey as just that, however they are more known for their finishing. Sometimes finishing two and three times to create a very unique profile. On paper I love the idea, giving whiskey a unique flavor without adding actual flavoring. When it comes to those barrels they use for finishing, many of the unique things actually come from the confectionery world. And I'll be honest, banana...not my first flavor I go to when I am looking for sweet, but I am going into this with an open mind and palate!

On the nose:
    The aroma was an immediate sensory surprise. Green, vine-ripe bananas emerged first—fresh, not overly sweet—paired with luscious caramel that reminded me of freshly melted toffee. Underneath, traditional bourbon notes held steady: dusty corn husks, light oak char, and a trace of waxy barley. The banana brandy finish added a tropical twist without overwhelming the bourbon’s core profile. Repeated nosing revealed evolving layers of brown sugar, a hint of barrel spice, and subtle roasted nuts.


Taste:
    The first sip delivered a full-bodied, syrupy mouthfeel, almost chewy in texture. The bourbon base announced itself assertively with classic notes of sweet corn, buttered toffee, and toasted oak. Then, the finishing elements took center stage. The caramel unfolded like dark toffee fresh from the stove—rich, smoky, and sweet but not overpowering. 

    Banana notes followed closely behind, soft and integrated, evoking memories of banana-flavored candies like Laffy Taffy—but with greater depth. There was a slight tropical fruit essence, tempered by a charred oak backbone that kept the sweetness in check. The banana-brandy influence felt intentional and well-integrated rather than an afterthought.


Finish:
    The finish lingered with a satisfying warmth, offering layers of charred caramel, brown sugar, and a touch of roasted banana bread. A gentle oak spice persisted, ensuring the whiskey didn’t end too sweet. The banana brandy’s influence subtly faded, leaving behind a pleasant memory of tropical fruit and smoky sugar. It was both comforting and complex—a lasting impression that invited another sip.


Final Thoughts: 
    Good Times Caramel Banana Bourbon is a bold, imaginative pour that successfully balances its dessert-like finish with classic bourbon character. While it is sweet I feel it is well-rounded, thanks to the whiskey’s proof and nice oak-driven profile. While it might not appeal to traditionalists, it’s an exciting after-dinner pour or conversation-starter for those looking for something truly different.
