 World Whiskey Society Doc Holliday 15 Year Cask Strength Bourbon Whiskey Review.

    World Whiskey Society is making quite a name for themselves for seeking out barrels from across the U.S. and beyond. Their approach often includes cask-strength releases, unique barrel finishes, and thoughtful proofing point. For this bourbon, they’ve wisely left it uncut. This is part of their Doc Holliday collection. In homage to Doc Holliday from the old west. Now, I've enjoyed a the 6 and 8 year versions and love the profiles they bring.

    Now this release is quite unique and eye catching, specifically its mash bill. While its exact distillery of origin remains undisclosed, some may do a bit of research on that mash bill and connect those dots. Even with that left undisclosed, to run across a 15 year bourbon, kept at cask strength is a gem, on paper, here in 2024!

Age Statement: 15 years.

ABV: 61.5% (Cask Strength).

Mash bill: 75% Corn, 13% Rye, 12% Malted Barley.

Area of Distillation: Kentucky.

Appearance: Mahogany with Citrine.


On the nose:
    A tapestry of rich, mature aromas greets the senses. Dark oak commands the forefront, showcasing the age. Sweet corn and a faint dusty grain provide warmth and familiarity. Then comes the fruit: a burst of cherry syrup, unmistakably luxardo-like, layered over freshly sliced apples dipped in homemade caramel. Vanilla marshmallow sweetness plays softly beneath, while a medley of baking spices — cinnamon sticks, nutmeg, and a whisper of cracked black pepper — creates complexity. The nose is simultaneously bold and inviting, with no harsh alcohol sting despite its proof.


Taste:
    The first sip is a symphony of sweet and spiced decadence. Luxardo cherry syrup leads, velvety and rich, immediately coating the palate. Notes of dark chocolate emerge next, reminding of a delicate chocolate cake drizzled with cherry reduction. Vanilla cream and toasted oak follow, adding warmth and balance. Midway, roasted nuts — pecans or hazelnuts — bring a nutty richness, as if scattered over a luxurious dessert. Baking spices intensify, with cinnamon, nutmeg, and clove adding depth. The experience is layered, unfolding gradually with each sip.


Finish:
    The finish is long, powerful, and satisfying. Oak char and brown sugar intertwine with lingering dark fruit — cherries still dominating — and a touch of spiced apple. A final wave of dark chocolate, accented by black pepper and cinnamon heat, resonates long after the last sip.


Final Thoughts:
    Doc Holiday Cask Strength Bourbon is an exceptional display of well-aged Kentucky whiskey at its peak. Its high proof enhances, rather than overwhelms, creating a deeply complex and rewarding experience. Every element — from its intense oak presence and bold fruit notes to its creamy vanilla and chocolate undertones. This is one that justifies its price with outstanding depth, precision, and craftsmanship. This is a bottle that true bourbon enthusiasts will savor and remember.
