    The World Whiskey Society has been making waves by sourcing rare barrels from around the U.S. and the globe, often bringing back cask strength releases with unique finishes. Tonight, we’re diving into their Doc Holiday Cask Strength Kentucky Straight Bourbon, a 15-year-old powerhouse coming in at 61.5% ABV. Full disclosure: this bottle was sent to me for review, but that doesn’t dampen the excitement—this one is a standout for multiple reasons. The mash bill is 75% corn, 13% rye, and 12% malted barley, hinting at a classic Kentucky profile that already has bourbon enthusiasts buzzing.*

ABV: 61.5% (Cask Strength).

Mash bill: 75% Corn, 13% Rye, 12% Malted Barley.

Appearance: Mahogany with Citrine.


On the nose:
    Rich dark oak, sweet corn, and a gentle rye spice. There’s a dusty, orchard-like quality, with Luxardo cherry syrup, caramel-dipped apple slices, and subtle hints of marshmallow sweetness. Cinnamon and nutty undertones round out the aroma, creating a layered and inviting profile.


Taste:
    The sip opens with a delightful sweetness, echoing the cherry and orchard notes from the nose. Creamy vanilla, brown sugar, and a thinly sliced chocolate cake element emerge alongside gentle oak, cinnamon, and cracked black pepper. The mouthfeel is rich yet balanced for a cask strength, with a dessert-like quality that continues from start to finish.


Finish:
    Long, smooth, and layered. Cherry lingers, accented by subtle nutmeg and the faint crunch of lightly toasted nuts. The oak, caramel, and vanilla fade slowly, leaving a classic bourbon warmth that invites another sip.


Final Thoughts:
    Doc Holiday Cask Strength Bourbon is the kind of high-proof, well-aged Kentucky bourbon that feels both luxurious and approachable. Every element, from the mash bill to the cask strength bottling, works in harmony, creating a classic, dialed-up bourbon experience.
