From time to time I scroll across Instagram (I know...shocker) and stumble into brands. With how many brands are hitting the shelves now a days you just never know what you will find. One night I was doing this and ran across Foxes Bow, and to be honest, the bottle caught my eye first. I assumed this was just another sourced whiskey project, not that there's anything wrong with that. However, once I started reading up on who is involved and what they are doing, there's some curious points going on.
Fox’s Bow starts with an Irish whiskey aged in ex-bourbon casks before finishing it in ex-rye and ex-Oloroso sherry casks. The use of rye barrels is particularly intriguing, as it’s relatively uncommon. However, I have noticed here in 2024 a few whiskey brands using rye barrels. I am assuming the path to using rye barrels is to bring that "spicy" character without using rye grains. Now the names behind the brand are Alice Carroll and Tony Foote. Alice, is fairly decorated in the whiskey world and Tony, while an accountant past has a deep love whiskey. Along with both having a deep love for Ireland.

The aroma is soft and creamy with subtle floral and herbal hints, likely thanks to that rye cask finishing. There’s a beautiful mix of stewed fruits, like grapes and apples, which I’d attribute to the Oloroso sherry influence. There’s no noticeable harshness; any youthful rough edges have been smoothed out by the finishing process. It’s rounded off by a delicate blend of charred oak, vanilla, and caramel with just a whisper of fresh rye bread.
Taste:
The first sip introduces a nice balance of barley-forward sweetness with buttery, shortbread cookie notes, a classic Irish profile. The sherry finish shines here with notes of stewed apples, cinnamon, and a bit of clove. As expected, the rye cask brings a subtle spice and an intriguing herbal quality, almost like fresh green grass. There’s a hint of lemon zest, which adds a refreshing brightness. The flavors evolve beautifully with each sip, revealing new layers of sweetness and spice without overpowering the underlying malt.

The profile and price give it a solid fight in the Irish Whiskey scene as not only enjoyable neat but would do great as a mixer.
Final Thoughts:
Fox’s Bow Irish Whiskey offers exceptional value and a unique twist on traditional Irish characterists. For its price point this Irish whiskey punches outside the price range and goes toe to toe with your big brand Irish brands. The rye finish provides an unexpected, delightful dimension and the sherry finish gives it just a bit of extra fruit notes. Overall making it a great daily sipper or an introduction to Irish whiskey for friends.
