    While Hayashi may be a lesser-known name internationally, the distillery operates in Okinawa, Japan, a region known for its distinct climate and natural resources. Which contribute to the whiskey's character. Unlike some Japanese distilleries that import or source their spirits, This is their eighteen year offering being aged in white oak casks, which is quite the age statement for a rice whiskey. From fermentation to distillation, aging, and bottling is handled at the distillery. This commitment to fully domestic production upholds traditional Japanese standards, allowing for meticulous control over quality and flavor development. 

  

  Hayashi’s whiskey is made entirely from Indica rice, setting it apart from traditional single malt or grain whiskies made from barley, corn, or rye. One of the defining features of Hayashi’s production process is the use of black Koji during fermentation. Koji is a type of mold commonly used in Japanese food and beverage production, including sake, shochu, and soy sauce. They are also using white oak casks for aging versus typical mainstream oak.

On the nose: 
    The initial impression is a warm and inviting wave of oak a deep, aged woodiness that highlights the spirit's long maturation. A prominent cedar note emerges, adding a fresh, aromatic lift. Subtle, slightly charred caramel notes follow, lending a toasty sweetness that brings warmth to the nose. There is an earthy quality likely from the rice base and black Koji fermentation, giving it a character that feels both grounded and nuanced. There’s also a touch of vanilla bean that rounds out the nose with a smooth, creamy undertone. As the aromas settle, a bread-like yeastiness surfaces, adding depth and evoking the sensation of standing in a distillery during active fermentation. Additionally, a hint of sandalwood weaves through, adding a subtle spiciness.


Taste:
    The palate opens with a deep earthiness that speaks to the rice base, creating a flavor that feels savory and substantial. This earthy quality is immediately complemented by a burst of spices, hints of cinnamon and subtle pepper add warmth, which then settles into a beautifully savory umami note. Moving through the flavors, there’s a profound oakiness that resonates on the mid-palate. The white oak aging lends a smoky char, which intensifies the experience and brings in a whisper of smoke. This smoky element, paired with a saltiness, mirrors flavors of miso soup or even soy sauce, enhancing the whiskey’s uniquely savory character.


Finish:
    The finish is exceptionally long, with the smoky, savory notes lingering gracefully alongside the sweet undertones of vanilla and caramel. This sweetness isn’t overpowering; it’s nuanced. Each sip makes you want to return to discover new layers, with the interplay between smoky, earthy, and slightly sweet notes offering a perfectly balanced and incredibly satisfying experience. There’s a hint of green tea on the very end. A delicate, grassy note that brings a touch of freshness, rounding out the earthy and umami flavors with a clean, herbal close.
