I received this spirit as a review sample from CNS Wine & Spirits. It is important to clarify this did not impact the ratings of this review.


    While Hayashi may be a lesser-known name internationally, the distillery operates in Okinawa, Japan, a region known for its distinct climate and natural resources. Which contribute to the whiskey's character. Unlike some Japanese distilleries that import or source their spirits, This is their eight year offering being aged in white oak casks. From fermentation to distillation, aging, and bottling is handled at the distillery. This commitment to fully domestic production upholds traditional Japanese standards, allowing for meticulous control over quality and flavor development. 

  

  Hayashi’s whiskey is made entirely from Indica rice, setting it apart from traditional single malt or grain whiskies made from barley, corn, or rye. One of the defining features of Hayashi’s production process is the use of black Koji during fermentation. Koji is a type of mold commonly used in Japanese food and beverage production, including sake, shochu, and soy sauce. They are also using white oak casks for aging versus typical mainstream oak.

Mashbill: 100% Japanese Indica Rice, Black Koji.

Area of Distillation: Okinawa, Japan.

Appearance: Deep Amber.


On the nose: 
    It opens up with a beautiful blend of bright and fresh notes that feel both familiar and uniquely Japanese. It begins with sweet white peaches, giving a soft, fruity sweetness. This is complemented by a subtle charred aroma, likely from the aging process in ex-bourbon casks. There's a gentle vanilla cream and caramel drizzle, reminiscent of homemade caramel. As you explore further, floral elements emerge, like fresh lilies or maybe even some spring blossoms. It’s soft and nuanced, creating an airy, elegant lift to the aroma. Then near the end is a subtle hint of orange zest that feels crisp and refreshing, along with an intriguing trace of yuzu, giving the nose a Japanese character that’s both fresh and slightly tart.


Taste:
    The first sip begins with a soft earthiness, highlighting the rice grain’s natural tone. This subtle earthiness quickly transitions into an elegant spiciness, gentle and slightly peppery. A beautiful array of floral notes blossoms, much like the experience of walking into a flower shop filled with fresh blooms. There’s a delicate sweetness here that removes me of Lilies and it feels both refined and natural. 


Finish:
    The floral layer then merges with a juicy orchard fruitiness, think ripe peaches and maybe even a hint of plum. It trails off with the light sweet subtle fruit notes and a bit of cedar spiciness.


Final Thoughts: 
    This whiskey is different from the average bourbon or corn-based whiskey; it’s a refined experience that allows drinkers to explore the distinct qualities of rice in a spirit. The dedication to traditional production methods shines through in every sip. I do recommend going in with an open mind to truly appreciate and accept the flavors that 100% rice brings across. It’s a delightful addition to any collection, especially for those who appreciate subtle, complex flavors.
