    For those unfamiliar, Watershed Distillery is an Ohio-based distillery known for aging, producing, and bottling all their spirits locally. They’re not just about bourbon, they’re also focus on brandy, gin, and vodka. This release is number three of four in their "Fall Finishing" series. Now, this is as much Ohio as you can get with a spirit. Not only distilling, aging, and bottling in Ohio BUT the barrel was from the Jackson Ohio cooperage AND the Maple Syrup was from Alliance, Ohio.

Age Statement: 5 years.

ABV: 54.6%

Mashbill: 72% corn, 21% rye, and 7% malted barley.

Area of Distillation: Columbus, Ohio.

Finishing: 3-4 months in Sweetwater Maple Syrup Barrels.

Appearance: Dark Mahogany.


On the nose: 
    Right off the bat, the nose reveals a gentle maple sweetness, nothing overpowering or overly sugary. You get hints of buttery sweet corn, a dusty huskiness, and a touch of rye spiciness. There’s a lovely complexity to it, with faint pastry notes like a freshly baked apple turnover dusted with cinnamon sugar. Classic bourbon aromas of vanilla, brown sugar, and a dash of white pepper round it out, creating a balanced and inviting aroma.


Taste:
    It delivers a warm, satisfying experience. The maple syrup influence is there but doesn’t overwhelm the classic bourbon profile. You get dusty corn, caramel, and a custard-like vanilla sweetness mingling with baking spices like cinnamon and clove. For me, it’s like sipping on an apple turnover with a cinnamon-sugar dusting, beautiful for the Fall season.


Finish: 
    The mouthfeel is pleasantly warm without being harsh. Even though it’s barrel-proof, there’s no excessive burn. Instead, you’re left with a cozy warmth that’s just right for cool evenings. The finish brings a hint of bitterness, which can sometimes come from maple syrup finishes, but it’s subtle and doesn’t detract from the overall experience.


Final Thoughts: 
    This is a bourbon you’ll want by your side for those crisp fall nights around the bonfire. The ABV gives it a pleasant warmth and classic bourbon notes. Honestly, this is a great pour for bourbon lovers wi while the maple syrup finish adds just the right amount of sweetness to make it a seasonal favorite.
