    Waterloo Gin has been making waves lately with a complete rebranding that feels both confident and refreshing. Out of Texas, they’re bringing local pride to every pour, using regional ingredients and a transparent production process that’s rare to see. Their Prickly Pear & Rose Gin is the latest addition to their lineup and immediately eye-catching with its striking, bubblegum-pink hue. It’s a bottle that looks every bit as beautiful as it tastes.

    Waterloo’s process is all about transparency and craftsmanship. Their base spirit starts from corn and runs through a vapor chamber distillation, allowing each botanical to shine without becoming overbearing. What really sets them apart is the way they list every single botanical right on the bottle and their website, clear and honest, just how I like it.

Mash bill: 100% corn base.

Botanicals: Prickly pear, Rose petals, Hibiscus, Juniper, Lavender, Grapefruit, Pecan, Orris root, Coriander, Anise, Ginger, Licorice root. 

Area of Distillation: Dripping Springs, Texas.

Appearance: Bubble gum pink.


On the nose:
    The aroma opens with a crisp, balanced bouquet of botanicals. Juniper makes its presence known, but it’s softened by earthy pecan and a whisper of coriander spice. There’s a lovely floral lift, fresh and light rather than perfumey. The prickly pear brings a fruity sweetness that dances with hints of grapefruit and just a touch of licorice. It’s a gentle, inviting nose that feels natural rather than forced.

Taste:
    That first sip is where the prickly pear shines. Juicy and slightly tart, it pairs beautifully with a touch of grapefruit citrus and the subtle floral character from rose and hibiscus. The result reminds me of hibiscus tea—relaxing, soft, and refined. The coriander adds a bit of peppery spice while the pecan brings an earthy backbone that keeps it grounded. Despite the ABV, it drinks smooth and balanced without any harsh edges.  


Finish:
    Light, clean, and lingering just long enough to leave a sweet memory of prickly pear and floral tones. The pecan subtly returns at the end, tying the experience together with an earthy warmth that keeps you coming back for another sip. 


Final Thoughts: 
    Waterloo’s Prickly Pear & Rose Gin is a standout example of how creative distilling can honor both place and palate.
