Clear Water Distillery, A few years back I ordered a bottle of ScandaLust Cinnamon Whiskey (now known as Canela) from Clear Water Distillery, and instantly fell in love. Not only because I'm a sucker for cinnamon, but due to their process on creating it using real cinnamon sticks in the process. They have this same sight on their other spirit offerings, dabbling in Eau-De-Vie, Vodka, Lorenz (Rum with a twist), Rye-Magnac (A Rye blended with Armagnac) and just announcing a Sophie's Gin.
Honestly, I love seeing a craft distillery really try some unique spirits and having fun. It helps make the spirit world turn. In a few releases, Clear Water did two different Rye whiskeys sourced from Indiana. One of these a 5 year age statement and the one we are looking at today, the 7 year barrel proof offering.

On the nose:
It’s intensely rich and inviting. The Rye comes across with layers of deep, rich oak, which forms a solid base. Rye spiciness and subtle medicinal notes also amplify the intensity. Underlying this is a dark oak character, enriched by hints of caramel, charred wood, and a butterscotch sweetness. Surprisingly for such a high proof, the nose is warm and approachable, free from any sharp alcohol notes, allowing the depth of spice and subtle grain notes to shine. As you keep going back you get this rich dark leather and a light clove spice.
Taste:
This whiskey is an experience. The mouthfeel is oily, dark, and rich with spices like cinnamon, clove, and nutmeg. There’s an intriguing nuttiness, and the oak flavors are deep and well-integrated. As you sip, a peppery warmth hits the palate, reminiscent of freshly cracked black peppercorns. It’s bold, it’s spicy, and yet it retains a slight sweetness that rounds out the flavor profile beautifully.
Finish:
The finish is where this whiskey shines. It’s a long, warming finish with hints of green apple, vanilla, and caramel, almost like dipping tart apple slices into a rich, homemade caramel sauce. The peppery notes linger, balancing the sweetness with a savory touch. Each sip reveals new layers and nuances, making it a whiskey you can savor over an evening.
Final Thoughts:
Clear Water Distilling has delivered a true gem with this 7-year-old barrel proof Rye. After that first sip, the quality, depth, and uniqueness of this whiskey are undeniable. It’s exactly what you’d hope for from an aged Indiana rye with the strength and character to match its age statement. It’s a distillery-exclusive and worth the pickup if you can.
