It is important to clarify this did not impact the ratings of this review.      Echo Spirits Distilling Company out of Columbus, Ohio where they are not only doing some distilling on their own but also sourcing, blending, and finishing. Their Engineer Series serves as a sandbox for innovation, where craftsmanship meets creativity. Batch 25A, dubbed Trail Mix , blends two mashbills from Bardstown Bourbon Company. To take it up a notch, they did a partial finishing of the blend using a secondary oak cask. The Engineer series is a limited run and each batch released is different than the next. Where the bottling itself is only about six months old, but the amount of passion behind the brand stems much longer.  Ryan Murray, a chiller mechanic, he took a leap of faith to turn his love for whiskey into something tangible, a move that resonates with many dreamers in the whiskey world. With an alien-themed aesthetic that ties into the idea of “abducting” barrels to create something uniquely their own. The bourbon is sourced from MGP and blended in-house to develop a their profile. Dovetail Distillery Cut Throat Oat Whiskey Review.      I received this spirit as a review sample from Dovetail Distillery, linked here . It is important to clarify this did not impact the ratings of this review.           Dovetail Distillery, currently the smallest craft distillery based in Nevada. Currently the distillery is doing quite a bit with unique grains and one of those grains is Oats. Oats can be a fun grain your craft distilleries can play around with and add a unique profile to their spirits. Their Cutthroat Oat Whiskey is no exception, bringing three unique grains to the mix. After being double distilled it is aged for two years in custom char/toast American white oak 15-gallon barrels.    Bulleit Bourbon Bottled in Bond Kentucky Straight Bourbon Whiskey Review.     Now, Bulleit is one of those iconic names in the spirits world. They been doing some solid sourcing over the years with their standard Bourbon and Rye and expanding their portfolio with their 10 year Bourbon, 10 year Rye, 12 year Rye, and are recently American Single  Malt. Now, Bulleit is ready to step into the distillation field with their first release containing 100% their own whiskey. Barreled in 2017, they decided to keep this release a Bottled in Bond, though having no official age statement outside of the 4 years that comes with Bottled in Bond.     I was a bit shocked to actually find this on the shelf so soon from release here in Indiana. Lasso Motel Tokaji Cask Finished Bourbon Whiskey Review.         I received this spirit as a review sample from Lasso Motel, linked here . It is important to clarify this did not impact the ratings of this review.      Lasso Motel might be a newer name in the whiskey world, but they’re already carving out a distinct identity for finishing. Now, if there's one thing I could always use more of in my life, it's Tokaji finishing. How well this finishing plays with a bourbon is unreal and so underutilized. This bourbon is sourced from Green River Distillery in Kentucky, who's been releasing some solid whiskey in recent time. Lasso Motel is refreshingly open about their sourcing, which is always appreciated.
