 High West Bottled in Bond Bourbon Whiskey Review.

    High West has been on my radar more than usual lately, surprising me in ways I didn’t quite expect. I’ll admit, I’ve been critical of them in the past, particularly when it comes to pricing, but this Bottled in Bond release caught my attention. Not only is it one of their first whiskeys made entirely from their own distillate (following the Bottled in Bond Rye), but it also comes with a level of transparency that I greatly appreciate. From mash bill to grain sourcing, High West is showing us exactly what went into this bottle, and that makes me lean in closer.

    This straight bourbon comes in at 50% ABV, aged a minimum of four years under the Bottled in Bond Act requirements. The mash bill uses GMO Colorado yellow corn and Idaho rye, no barley or wheat in sight. That grain-forward approach really sets the tone, and it’s refreshing to see High West not only disclose the mash bill but also the origin of the grains themselves.

On the nose:
    A grain-forward introduction brings a clear craft whiskey vibe, but it quickly unfolds into something sweeter and more approachable. Notes of peach cobbler rise first, drizzled with honey and topped with a crumble-like Dutch pastry crust. Soft corn sweetness balances herbal rye spice, with undertones of caramel, vanilla, and light char. There’s even a hint of citronella, granola, and honeyed oats adding nuance.


Taste:
    The mouthfeel is immediately viscous and coating, surprisingly full for a four-year-old bourbon. The rye spice shows up as floral and lively rather than sharp or medicinal, while the peach note lingers in the background, joined by honey, granola, and a brittle-like sweetness. Caramel cream and oak spice layer in subtly. The profile leans corn-sweet from start to finish but carries enough rye-driven energy to stay balanced.


Finish:
    The whiskey leaves behind a lingering sweetness with peppery spice, honeyed grain, and soft oak. It’s approachable, well-structured, and delivers more than expected from a young High West bourbon.


Final Thoughts: 
    High West’s Bottled in Bond Straight Bourbon is a pleasant surprise. It’s grain-driven, sweet, and viscous with just enough complexity to feel mature beyond its four years. While the $80 price tag is a tough sell, if you find it closer to $60–65, it’s worth grabbing. As High West continues aging their own distillate, this release shows real promise for what’s to come. For now it's a respectable first full-house bourbon that sets the stage for better things ahead.
