West Fork Whsky Co. Bloody Butcher Bottled in Bond Bourbon Review.

West Fork Whsky Co. Bloody Butcher Bottled in Bond Bourbon Review.

West Fork Whsky Co. is no stranger to this channel, and they’ve consistently shown what a craft distillery can achieve when they stay true to their roots. Based in Indiana, West Fork not only ages, distills, and bottles their own spirits, but also takes pride in pushing boundaries with unique mash bills and special releases. Tonight’s pour, the Bloody Butcher Bottled in Bond Straight Bourbon, is one of those examples.

My very first encounter with this heirloom grain was through West Fork, and it left a lasting impression. It’s not for everyone, but when handled with care, it can create a profile that’s both exciting and refined. This release is especially intriguing, as it’s not just a 100% Bloody Butcher mash bill, it’s also bottled in bond, carrying with it the standards of quality and transparency.

Age Statement: 5 years (Bottled in Bond).

ABV: 50%.

Mash bill: 100% bloody butcher corn.

Area of Distillation: Westfield, Indiana.

Appearance:

On the nose:
The first impression is soft, sweet, and buttery, almost deceptively gentle for a craft bourbon. Digging deeper reveals that signature Bloody Butcher floral spice, mingling with notes of honeysuckle sweetness and a faint tart green apple. The char and dustiness from the corn round things out, giving this an elegant, layered nose without any harsh edges.

Taste:
The flavor carries forward the promise of the nose. It opens with a sweet and dusty corn profile, layered with light bitterness, caramel, and vanilla. That signature floral spice of Bloody Butcher emerges again, joined by hints of grain funk that remind you this is a true craft expression. A touch of peppery warmth adds complexity, while barrel spice and a slight oiliness give it a satisfying weight.

Finish:
Soft, sweet, and lightly peppery. A cracked pink peppercorn note lingers alongside subtle floral spice. It’s approachable yet unique, bridging the gap between seasoned bourbon drinkers and those who appreciate the distinctiveness of craft whiskey.

Final Thoughts:
West Fork Whsky Co. Bloody Butcher Bottled in Bond Bourbon is a shining example of what makes craft whiskey worth chasing. It delivers a profile that’s approachable, interesting, and unlike the typical corn-forward bourbons you’ll find elsewhere. I love the unique yet balanced profile they created. This profile shows promise for what this distillery can do as their barrels age further. This is a bourbon worth seeking out, especially at the distillery’s tasting bar.

Rating: B (Above average).
