    Penelope has been on a roll lately, especially since settling under the MGP umbrella, and their recent limited releases have been grabbing attention for good reason. Marshmallow Toast debuted in late 2024 alongside the Cream Brûlée Architect in 2025, and each showcases Penelope’s knack for pulling highly specific flavor profiles from single barrels. I missed the excitement of batch one, but batch two found me at the right moment during my travels, and at a reasonable price. As a longtime Penelope fan and a lover of toasted bourbons, this release had me genuinely excited.

    Batch one appears to have been closer to four years old, making batch two a slight age upgrade. The whiskey is then finished in heavily charred No. 3 casks, designed to coax out toasted sweetness, vanilla creaminess, and the “marshmallow toast” character they’re aiming for. The transparency behind this release only adds to its charm, Penelope lets you know exactly how the profile is achieved.

Age Statement: 5 years.

ABV: 55%. (Barrel proof).

Mash bill: 75% corn, 21% rye, and 4% malted barley.

Area of Distillation: Lawrenceburg, Indiana.

Appearance: Golden hue.


On the nose:
    The aroma leans more toward cream brulee than toasted marshmallow, but the theme is there. Vanilla, caramel, and brown sugar rise first, supported by a clean toasted oak character. The rye portion of the mash bill shows up with a pleasant herbal and slightly medicinal spice. There’s also a gentle cherry note, fresh orchard cherry rather than cocktail cherry, adding brightness. It’s soft, sweet, and inviting, without any harsh ABV punch.


Taste:
   The mouthfeel is the standout: coating, rich, and wonderfully clingy. Brown sugar, toasted vanilla, and charred sweetness blend together, delivering something close to a toasted marshmallow effect without being overly sugary. The rye spice pops nicely, giving herbal, floral, and peppery layers that keep it balanced. A subtle cherry note returns here too, never dominating but adding dimension. Barrel proof power is present without ever feeling hot, and the toasted finish brings an extra layer of dessert-like creaminess.


Finish:
   Long and gently warming, with lingering caramelized sugars, charred oak, and that soft vanilla cream. It leaves behind a pleasant rye tingle and a very steady sweetness. Classic bourbon traits with a toasted twist, nothing flashy, but very satisfying.


Final Thoughts: 
    At around $55, Penelope priced this right for a 5-year toasted barrel proof bourbon. It isn’t groundbreaking and the “Marshmallow Toast” name oversells what’s actually in the glass. But taken on its own terms, it’s a well-made, flavorful, dessert-leaning toasted bourbon that fits perfectly into Penelope’s growing lf you enjoy toasted barrels and find this at or near SRP, it’s worth the pickup.
