     Whiskey Acres has quietly become one of the most exciting craft distilleries in the Midwest. Based in Illinois, they are true estate distillers, growing, harvesting, distilling, aging, and bottling their own grain. That level of control shows up in the glass, and their Blue Popcorn Bourbon might be one of the most unique expressions in their lineup.      This yearly release swaps traditional yellow dent corn for blue popcorn, immediately setting it apart on the shelf. It is important to clarify this did not impact the ratings of this review.      Whiskey Acres continues to prove why they are one of the most compelling true farm distilleries in the country. Based in Illinois, they handle every step of the process themselves, from growing the grain to distilling, aging, and bottling. That seed-to-bottle approach already sets them apart, but this release takes things even further with the use of heirloom Bloody Butcher corn.      This bottle was one I was excited to get my hands on, especially knowing how quickly it sold out at the distillery. Whiskey Acres Bottled in Bond Straight Bourbon Whiskey Review.      Whiskey Acres' Bottled in Bond Straight Rye Whiskey is the kind of spirit that makes you appreciate craft distilling. Distilled, aged, and bottled in DeKalb Illinois. Whiskey Acres takes it a step further by growing their own grains, showcasing a full commitment to their whiskey from soil to glass. Recently, they’ve made their way to Indiana and I instantly grabbled myself some of their releases. Day one I picked up their bottle in bond bourbon and bottle in bond rye.      This bourbon meets all the strict requirements of the Bottled in Bond Act: aged at least four years, bottled at 50% ABV (100 proof), and distilled in a single season under one master distiller’s supervision, and aged in a government-bonded warehouse. Not only do they distill, age, and bottle their whiskey onsite, but they also grow the grains used in every drop. That level of control over the process is rare—and exciting.
