    From the heart of Illinois comes Whiskey Acres, a true grain-to-glass operation that takes craftsmanship to the next level. Not only do they distill, age, and bottle their whiskey onsite, but they also grow the grains used in every drop. That level of control over the process is rare—and exciting. After falling in love with their Bottled-in-Bond Bourbon, I was eager to finally get my hands on their Straight Rye. Now that it’s made its way into Indiana, I couldn’t wait to see how this one stacks up.
  
  This rye whiskey meets all the strict requirements of the Bottled in Bond Act: aged at least four years, bottled at 50% ABV (100 proof), and distilled in a single season under one master distiller’s supervision, and aged in a government-bonded warehouse. I know this is another huge commitment for a craft distillery to preform. 2024 has been my rye era and seeing how transparent a craft distillery is being, I knew I had to check them out.

Age Statement: 4 years.

ABV: 50%.

Mashbill: 75% rye and 25% corn.

Area of Distillation: DeKalb, Illinois.

Appearance: Golden hue.


On the nose:
    The aroma opens rich and spicy, with prominent herbal notes reminiscent of steeped tea. There’s an underlying creaminess, like vanilla buttercream, mixed with light hints of caramel and green apple. As it sits, an oaky backbone emerges, adding depth, while subtle cinnamon and rye spice round out the profile beautifully. There’s no hint of harshness or ABV. And surprisingly there's not even a craft “waxy” note here, which I don't mind at all, just a well balanced nose.


Taste:
    The taste is bold and grain-forward, with a rush of herbal spice and rye bread. It’s rich and oily, coating the palate with peppery warmth and oak that seems to last forever. For a 50% ABV rye, it’s incredibly smooth, with a layered sweetness that hints at brown sugar and molasses. There’s a faint chocolatey essence, adding to the overall complexity, while baking spices come through to keep it lively and engaging. This is rye whiskey in its purest form, with the grain and oak at the forefront.


Finish:
    The finish is long and full-bodied, showcasing a deep oaky profile with touches of char, caramel, and vanilla. The rye spice lingers, blending seamlessly with subtle baking spices. A slight corn sweetness is present but unobtrusive, adding to the depth without overpowering the rye character. For fans of oaky, spicy rye, this whiskey delivers beautifully on its promise.

This is a stellar choice for anyone looking for an authentic, grain-forward rye without the strong herbal or dill notes often found in other ryes. Its balanced oakiness and rye spice make it a sip to remember. For a craft distillery that grows its own grains and controls the entire process, this whiskey delivers a unique, terroir-driven experience that’s well worth exploring.
