Whiskey Acres continues to prove why they are one of the most compelling true farm distilleries in the country. Based in Illinois, they handle every step of the process themselves, from growing the grain to distilling, aging, and bottling. That seed-to-bottle approach already sets them apart, but this release takes things even further with the use of heirloom Bloody Butcher corn.
This bottle was one I was excited to get my hands on, especially knowing how quickly it sold out at the distillery. Bloody Butcher corn tends to bring a deeper, earthier sweetness compared to traditional yellow dent corn, and I was eager to see how Whiskey Acres would showcase it.
Age Statement: 4 years.
ABV: 47.8%.
Mash bill: 75% bloody butcher corn, 15% soft red winter wheat, & 10% malted barley.
Area of Distillation: DeKalb, Illinois.

The aroma opens with buttery sweet corn layered with floral tones that feel like walking past a wildflower field in the summer. There is a soft red apple note with a gentle tartness, along with caramel sweetness and pastry dough. As it develops, it leans into something reminiscent of an apple turnover without the heavy icing, more pastry than fruit. There is also a light cedar-like oak presence and a faint woodshop character, subtle and pleasant rather than overpowering. Remarkably, there is no harsh ethanol for a nearly 48% bourbon, and the nose feels complex beyond its four years.
Taste:
The first sip mirrors the nose beautifully. Buttery pastry dough carries through, though the fruit shifts from apple toward a soft, gently sweet cherry. It feels like biting into a fresh pastry just before the glaze is added. The Bloody Butcher corn brings a slightly earthy, husky sweetness that is noticeably different from standard yellow corn. The soft red winter wheat introduces a gentle spice that keeps the sweetness in check, while the malted barley contributes a light waxy texture that rounds everything out.
On subsequent sips, more floral notes appear alongside a lightly charred sweetness that resembles the crisp top of a crème brûlée. The char is delicate, adding warmth without bitterness. The finish lingers with buttery corn sweetness, subtle pepper, and a balanced oak presence. It is easy-drinking yet layered enough to reward attention.
Finish:
The finish is long, buttery, and layered with sweet corn and a hint of peppery spice. The corn’s sweetness is complex yet approachable, making it easy to savor as a daily drinker. There’s no sharpness or harshness, just a pleasantly lingering flavor that showcases the craft behind this spirit.
Final Thoughts:
This is one of the best examples of Bloody Butcher corn I have tasted. The grain shines, but it does not overpower the experience. Instead, it works in harmony with the wheat and barley to create something both approachable and distinctive. It delivers character, craftsmanship, and uniqueness that justify the tag. For a four-year craft bourbon, this is impressive work and a strong statement of what farm distilling can achieve.
