Distilled, aged, and bottled in DeKalb Illinois. Whiskey Acres takes it a step further by growing their own grains, showcasing a full commitment to their whiskey from soil to glass. Recently, they’ve made their way to Indiana and I've been enjoying what they are bringing to the shelves. This is their yearly limited release of using Bloody Butcher Corn. Being someone that loves unique mash bills and grains this caught my eye instantly. I know this is another huge commitment for a craft distillery to preform.
According to Whiskey Acres social media pages, this was a day one sellout at the distillery however some did make it to the surrounding market and online. After my reviews for their bottled in bond Bourbon and Rye, I came in with very high hopes for this release!
Age Statement: 4 years.
ABV: 47.8%.
Mash bill: 75% bloody butcher corn, 15% soft red winter wheat, & 10% malted barley.
Area of Distillation: DeKalb, Illinois.
Appearance: Deep red mahogany.
On the nose:

The bourbon opens with a beautiful, buttery sweetness from the corn, accented by soft floral notes reminiscent of a wildflower field. Hints of tart red apple, more like a slightly tangy Red Delicious. This is evolving into a warm pastry scent, little an apple turnover, but with understated sweetness. Layers of caramel, a dash of spicy wheat, and a waxy barley undertone contribute complexity. There is a faint cedarwood smokiness, subtle yet grounding.
Taste:
The palate matches the nose. It begins with a rich, buttery pastry dough flavor that shifts from apple to a softer, sweet cherry, evoking freshly baked cherry pastries before the icing is added. There’s a pleasantly dusty corn character and a bit of spice from the soft red winter wheat that cuts through the sweetness and adds a black pepper kick. The barley’s waxiness adds a smooth texture, enhancing the overall experience. On a second sip, floral notes emerge more distinctly, bringing a wildflower field sensation. The bloody butcher corn contributes an earthy depth with a slight charred edge, reminiscent of a crème brûlée top with a crisp yet gentle char.
Finish:
The finish is long, buttery, and layered with sweet corn and a hint of peppery spice. The corn’s sweetness is complex yet approachable, making it easy to savor as a daily drinker. There’s no sharpness or harshness, just a pleasantly lingering flavor that showcases the craft behind this spirit.
Final Thoughts:
Whiskey Acres Bloody Butcher Bourbon delivers impressive value, especially for a craft whiskey with such a unique profile. This is a standout example of a bloody butcher corn bourbon, bringing elegance and depth that make it memorable. A beautiful example of craft whiskey done right, specially using a unique grain in the mash bill.
