    Still Austin has been one of those Texas distilleries that quietly keeps earning my trust bottle after bottle. Based out of Austin, Texas, they’ve been doing some genuinely impressive work in the craft space, and once their standard rye finally started showing up here in Indiana, it didn’t take long for me to become a fan. When I saw the cask strength version hit shelves, it was an instant buy, no hesitation.
Texas whiskey can be polarizing, and I get why. But I’ve personally had great experiences with Still Austin, Balcones, Garrison Brothers, and others, so I was genuinely excited to see how they’d handle a barrel-proof rye.

    It’s distilled, aged, and bottled in Texas, which matters because the climate plays a massive role in how these whiskeys mature. The heat accelerates interaction with the barrel, and Still Austin leans into that rather than trying to mask it. Kept at cask strength, this whiskey doesn’t hide behind filtration or dilution.

ABV: 58%. (Cask strength).

Mash bill: 100% rye.

Area of Distillation: Austin, Texas.

Appearance: Dark mahogany.


On the nose:
    Right out of the gate, this is gorgeous. Spicy rye bread, sweet grain, and a touch of icing-like sweetness sit up front. There’s a strong herbal quality that immediately reminded me of older MGP rye, layered with rich char, dark oak, and a velvety, oily texture. Honey sweetness, mint, and a deep barrel presence come through without any harsh ethanol. It smells bold, mature, and shockingly composed for its age.


Taste:
   The mouthfeel is thick, oily, and coating. Classic rye spice leads the charge, followed by honeysuckle, floral notes, and that fresh-cut flower shop character. Herbal tones of mint, clove, and cinnamon cling beautifully to the palate. Dark fruits like raisin, fig, and plum add richness, while a decadent chocolate note emerges toward the finish. It’s intense without being aggressive, rich without being overwhelming.


Finish:
   Long, lingering, and peppery with a drying edge that keeps things balanced. Char, spice, oiliness, and dark sweetness hang around far longer than you’d expect from a whiskey this young. It’s a finish that demands slow sipping and rewards patience.


Final Thoughts: 
    This is a bold, unapologetic rye that drinks far beyond its age statement. There’s no noticeable youth, no harsh heat, and no off notes. Blindfolded, you’d be hard-pressed to guess this was only two years old, especially with how much it channels older, well-aged rye profiles. At around $54 to $60, it’s a strong value for a true cask strength craft release.

    If you like rye and you’re open to Texas whiskey, this is absolutely worth your time.
