Over the past year I've been picking up so many spirits from Journeyman Distillery. Since they opened a second distillery right in Valparaiso Indiana, they are a short drive away. Honestly, I've really enjoyed so many of their offerings and they are becoming a great definition of what makes craft spirits. The other day I was up having dinner at the distillery (great food and cocktails by the way) and stopped into the gift shop as I normally do. Seeing this instantly caught my eye since I've noticed many distilleries using beer finishing casks. Not sure if that's the new thing or what, but it seems to be many of them coming out. While I've never had any beers from Half Acre Brewing, I figured I will take the dive!

ABV: 54.44% (Cask Strength).
Mashbill: 100% Organic Wheat.
Area of Distillation: Indiana and Michigan.
Finishing: Half Acre Stout Beer Barrels.
Appearance: Mahogany/Dark Amber.
On the nose:
Aroma hits hard with layers of malted milk chocolate. It’s almost like walking into a candy store—reminds me of Whoppers or even those chocolate bunnies you get at Easter. There’s also a notable funk from the beer barrel finish, adding an extra layer of complexity. Spice and a subtle char come through, along with some sweet vanilla notes, probably from the beer barrels. At cask strength, the ABV warmth is strong, almost overwhelming on the nose, so you might want to let it sit and air out for a bit. That beer barrel is definitely dominant in this one, and the wheat, a typically mild grain, gets lost in the background. If you really look for it, you will find a bit of wheat spice and some of the barrel char.
Taste:
Taking a sip, the experience is... different. You’re immediately hit with melted milk chocolate, similar to the nose, but the palate adds complexity. There’s a little spiciness from the wheat, along with a creamy, Guinness-like stout head flavor. It’s not Guinness, but it has that creamy vanilla, malty vibe. You get that milk chocolate across the palate, from beginning to end. Nice barrel spice and a light barrel char sparks some "common" notes for such a unique whiskey.
Finish:
What throws me off is the funk from the barrel, which lingers alongside the spice and char. There’s a certain peppery edge to it, and while it’s not overly warm on the palate compared to the nose, it’s still an intense sip. The most striking thing is this is hands-down the most chocolate-forward whiskey I’ve ever tried. Imagine a chocolate Tootsie Roll or Easter Bunny candy in a glass, with some beer barrel funk and a bit of wheat spice thrown in.
Final Thoughts:
A super unique whiskey that I think its good for its uniqueness but is certainly not for everyone. At $125, it’s a bit of a gamble, and I’d only recommend it if you’re really into unique, experimental whiskeys, or a die-hard chocolate lover. The beer barrel finish overshadows the wheat base, and while it’s fun and different, it might not be something you reach for every night. Personally, I’d save it for special occasions or to share with a friend who’s curious about trying something truly outside of the box.
