    Every now and then, a whiskey catches your eye not because of its finish or age, but because of its grain. That’s what drew me to West Fork Whsky Company’s Amber Corn Straight Bourbon, a single barrel, cask strength offering that proudly showcases two types of corn. Based out of Westfield, Indiana, West Fork distills, ages, and bottles this bourbon entirely in-house, setting it apart from their sourced Old Hamer line. This bottle was a store pick from Indiana Liquor Group, and with its transparency, mash bill, and craft-level care, it immediately had my attention.

Age Statement: +3 years. (Single barrel).

ABV: 60.1% (Cask Strength).

Mash bill: 65% yellow corn and 35% amber corn.

Area of Distillation: Westfield, Indiana.

Appearance: Warm orange tinted gold. 


On the nose:
    The first whiff brings a classic bourbon sweetness, corn-forward and buttery with hints of vanilla, brown sugar, and a subtle ribbon of caramel. Cherry liqueur and light char linger in the background, while a waxy undertone suggests the influence of that amber corn. It’s straightforward yet inviting, setting up expectations for a sweet, rich sip.


Taste:
    Warm and full-bodied from the start, the whiskey opens with dusty grain notes before unfolding into cherry cordial, milk chocolate, and caramelized sugar. The cherry note recalls Luxardo syrup — bright yet deep. The waxiness remains, coating the tongue beautifully while lending a creamy texture. Mid-palate, that chocolate grows stronger, developing into malty milk chocolate tones that nearly overtake the sip in the best way possible.


Finish:
    Long and warming, with lingering notes of chocolate and dusty corn sweetness. There’s a faint char that anchors it, keeping things grounded while the cherry-chocolate combo slowly fades. It’s not overly complex, but what’s here is bold, cohesive, and enjoyable from start to finish.


Final Thoughts: 
    West Fork Whiskey Company’s Amber Corn Straight Bourbon is a testament to creative grain blending and honest craftsmanship. It’s simple but purposeful, letting the amber corn’s waxy sweetness and unique profile shine. For around $65, you’re getting a single barrel, cask strength, locally distilled bourbon that celebrates transparency and experimentation. I’d love to see this mash bill with more age down the line, but for now, it’s a solid performer that proves Indiana’s craft scene is full of surprises.
