Every once in a while, you stumble across a bottle on the shelf that immediately demands your attention. That was exactly the case with Watchman Barrel Strength Bourbon from Round Barn Distillery. While doing some bottle hunting up in Northern Indiana, a stop at Bee Liquors led to spotting this deep copper-red bourbon sitting on the shelf, and honestly, the color alone sold me on taking a closer look.
What made this release even more interesting was learning that this marks a major step forward for Round Barn. Known more for wines, flavored offerings, and lower-aged spirits up to this point, this release feels like the distillery planting its flag in the premium craft bourbon world. Barrel proof. Eight years old. Distilled and bottled in-house.

It carries that fresh-from-the-rickhouse aroma where the barrel influence feels rich and oily without becoming overly tannic or bitter. The corn sweetness stays restrained and mature, avoiding any youthful grain notes that can sometimes show up in younger craft releases.
Meanwhile, the rye spice adds gentle cinnamon stick and cracked rye grain character rather than sharp pepper heat. As it opens up, notes of vanilla bean and homemade caramel begin to develop, adding softness underneath the darker profile. The oak presence is bold but beautifully balanced, creating depth without overwhelming the whiskey.
Taste:
The palate completely delivers on the promise of the nose. Dark cocoa powder and milk chocolate dominate early, followed by buttery sweet corn, toasted oak sugars, and warming rye spice. The mouthfeel is rich and coating with just enough waxiness from the malted barley to give it texture. One of the standout qualities here is how dessert-like the whiskey becomes without feeling overly sweet.
It evokes flavors of chocolate-covered granola bars loaded with oats, almonds, caramel drizzle, and dark chocolate pieces. There’s also a beautiful honey character that feels fresh and local, almost like honey straight off the comb from a farmers market. The oak integration deserves special praise. At eight years old and barrel strength, it would have been easy for this to become overly bitter or drying. Instead, the oak feels rich, charred, and decadent while remaining balanced and approachable.
Finish:
The finish lingers with gentle white pepper spice, milk chocolate, toasted granola, and lingering oak warmth. Despite the proof, the alcohol never becomes harsh or overpowering. Instead, it enhances the richness of the charred oak and cocoa profile. As the sip evolves further, green apple sweetness and caramel dipping sauce begin to emerge, adding brightness late into the experience. It’s the kind of finish that encourages slow sipping and rewards patience as new layers continue unfolding in the glass.
Final Thoughts:
This is one of those bottles that reminds you why supporting craft distilleries can be so exciting. Round Barn Distillery didn’t just put out a good craft bourbon here, they put out a genuinely excellent bourbon regardless of category. At $89.99, the value feels entirely justified considering the age statement, barrel proof presentation, transparency, and overall quality. More importantly, this feels like the beginning of something bigger. If this is the standard Round Barn is capable of reaching with their early premium releases, they are absolutely a distillery worth watching closely moving forward.
